- Rinse the cornmeal several times.
- Put the rinsed cornmeal in a pot, pour in the water, and add the salt.
- Bring to a boil over medium heat, stirring occasionally.
- Then lower the heat and cook, stirring constantly with a wooden spoon.
- Add the pumpkin purée and sage and keep stirring for 15–20 minutes, until the polenta starts to pull away from the sides of the pot.
- Stir in the Parmesan and butter.
- Serve immediately, while hot.
