Greenling Fish Soup (Ukha)

A tasty, wholesome fish soup — make it and treat your family! My loved ones, especially the kids, aren't huge soup fans. But ukha is a different story entirely! :) We probably make it more often than any other soup, and we love experimenting with different kinds of fish. Today I'm making ukha with greenling (terpug)!

  • First, prep the fish: gut it and scale it. I leave the heads and fins on — they make for a richer broth. If your fish is large, you can cut it into a few pieces.
  • Set a pot of water on the stove, then prep the rest of the ingredients:
    • wash, peel, and cut the potatoes into medium pieces;
    • wash and peel the carrots, then dice them;
    • peel and finely chop the onion;
    • rinse the millet thoroughly under running water.
  • Add the carrots to the boiling water and cook for 10 minutes. Then add the potatoes and onion, along with the bay leaf and allspice. Season with salt to taste at this point.
  • Cook everything together for another 10 minutes (until the potatoes are nearly done). Then add the fish and millet to the broth and cook everything for about 5 minutes.
  • Turn off the heat and stir in the ground black pepper and finely chopped dill.
  • Enjoy!
