- Boil the beef heart until tender (about 1.5 hours) with the bay leaf and some salt. Let it cool. Slice the onion into half-rings and marinate it in a mixture of 200 ml water + vinegar + salt + sugar (the amounts listed in the recipe). The onion needs about 30 minutes to marinate. Cut the heart into strips, toss it with the onion, season with pepper, and add the vegetable oil. You can eat it right away, but it's even better after some time in the fridge :)
