Sauerkraut Shchi with Potatoes in a Slow Cooker
Simple and delicious. Great for anyone watching their weight. I love shchi—sometimes I add a little sauerkraut along with fresh cabbage. I like it even better that way.

- To start, put the meat into the slow cooker—bone-in beef works best for a rich broth. Select the "Meat" setting (cooking time 1 hour). 2. Once the meat is cooked, strain the broth off the bones and pull the meat apart into pieces. Return everything to the pot. 3. Add the potatoes, cut into pieces, to the finished broth, along with the chopped fresh cabbage. Switch on the "Soup" setting (cooking time 10 minutes). 4. Meanwhile, wash, peel, and grate the carrot. Open the lid, add the carrot, and run the "Soup" setting once more (5 minutes). Our light soup is ready. Serve it with fresh herbs and sour cream.
