Sweet Cherries in Syrup for Winter

Enjoy your favorite summer fruit any time of year! I'm not much of a canner, so when I do put things up for winter, my stash usually ends up pretty modest. Sweet cherries are a bit different from other things I preserve, though—they're wonderful for baking and for decorating, so I usually try to put up plenty.

  • Sort through the cherries and pull off the stems. It's best not to use any damaged ones. Rinse the cherries and pack them into sterilized jars. Fill the jars with boiling water and let them sit for five minutes. After that, pour the water back into a pot and wait for it to come to a boil. Repeat the process—pour the water back over the cherries for another five minutes. Take a pot, add the sugar, and pour in the water from the jars. Bring the syrup to a boil and cook it for about seven minutes. When it's ready, pour the syrup over the cherries in the jars and seal them. Cover them with something warm—a lot of people use a blanket. Wait for the cherries to cool. Done! Now winter won't feel quite so harsh. Enjoy!
