I only got into canning compote last year, but now I want to put up berry and fruit drinks every season. There's nothing like opening a jar of homemade compote on a cold winter evening—beautiful, bright, delicious, and sweet! It instantly lifts your spirits and brings back summer.

- You can use as many cherries as you like—the key is keeping the proportions. 1. Sort and wash the cherries, choosing only ripe, sound fruit. 2. Pack the cherries into jars that you've sterilized ahead of time. 3. Pour boiling water over the cherries, filling the jars to the top. 4. Let the cherries sit in the boiling water for 15 to 30 minutes (don't forget to cover the jars with lids). The water should change color. 5. Once the time's up, pour the water from the jars back into a pot and bring it to a boil. 6. Add the sugar and the vanilla. 7. Pour the boiling syrup over the cherries and seal the jars tightly. 8. Wrap the jars in a blanket and keep them upside down until completely cooled. 9. Move the finished compote to storage. Here's to bright moments this winter! :)
