Sweet Cherry Compote with Pits for Winter

To make sure you have enough for winter, put up plenty—it's just that good! Sweet cherries are perfect for compote. One of the nice things about cherry compote is that the cherries stay firm and absolutely delicious. With a few jars put away, you can return to summer for a little while even in the depths of winter.

  • First, sort through the cherries, remove the stems, and rinse them. Put them in a clean jar, fill it with water, cover with a lid, and warm it through for five to ten minutes. Then pour the water into a pot, add the sugar, and set it over the heat. Once the syrup comes to a boil, pour the liquid back over the cherries in the jar and seal it. Be sure to check that the jar is sealed tight. Wrap the jars in something warm—a blanket works perfectly. Once the jars have cooled, the compote is ready!
