Guacamole with Garlic and Red Onion
A great light, quick appetizer! Tasty and healthy! You can make classic guacamole completely smooth, like a paste, or leave it as a chunky paste that's almost like a salad. It all depends on the texture of the avocado. If the flesh is very soft, just stirring it will let the creamy avocado bind all the other ingredients together. If the avocado is on the firm side, it's better to blend it so the sauce doesn't look disjointed.

Step 1:
To make classic guacamole, you'll need the following ingredients: a ripe, soft avocado (softer is better than firmer), a red onion, a lime, premium extra-virgin olive oil, salt, ground black pepper, any hot pepper, a fresh tomato, and garlic.

Of course, with juicy August tomatoes the sauce will have a brighter, richer, livelier flavor. "Winter" supermarket tomatoes aren't quite the same as garden-fresh summer ones, but they'll do for the dish. The tomato needs to be washed, scalded with boiling water, and carefully peeled with a sharp knife. Cut the tomato flesh into small pieces and put it in a bowl.

Peel the red onion, chop it finely, and add it to the chopped tomatoes in the bowl. Add the seeded hot pepper and the peeled, minced garlic there as well.

Rinse the avocado, then cut it in half lengthwise, gently "open" it, and remove the pit. Scoop out the flesh with a tablespoon, cut it into small pieces, and add it to the bowl with the rest of the ingredients.

Also add salt, ground black pepper, olive oil, and lime juice. Blend all the prepared ingredients together. You can blend to a perfectly smooth purée, or leave a few small chunks for texture.
- Classic guacamole isn't meant for long storage, so don't make it in large batches. The sauce can sit for a day or two in the refrigerator. Its color will change somewhat, but that won't affect the flavor.
