Egg and Sirtaki Cheese Appetizer

The zesty flavor and dead-simple prep of this snack are one of a kind. I remember as a kid, my mom would look at a bowl (not exactly a small one) of boiled eggs the neighbors in our communal apartment had given us and sigh... "What am I going to do with all of you?" One day I happened to pair an egg with some Sirtaki cheese... and it was delicious. The sharp, salty cheese went perfectly with the taste of the egg white. And with a cup of black coffee, it's pure bliss.

    For this simple snack you'll need just two things: boiled eggs and brined Sirtaki cheese. That's it!

    First, peel the eggs.

    Then cut them in half crosswise.

    Scoop out the yolks. You'll only need one of the four yolk halves for the garnish—keep the rest in the fridge for later.

    With a teaspoon, scoop the Sirtaki out of its tub and fill the hollows in the egg whites. I used one teaspoon per egg-white half.

    Now grab that reserved yolk half and crumble it over the top—I just pinched and crumbled it with my fingers.

  • If you only have raw eggs on hand, just boil them first.
