Step-by-step cooking
Step 1:
Pour boiling water over the poppy and leave for 1-2 hours.
Step 2:
Dried apricots with raisins in one bowl also pour boiling water and leave for 1-2 hours.
Step 3:
Drain the water from dried apricots and raisins, bring its volume to 1.5 cups and pour it into a saucepan.
Step 4:
Pour the washed rice into the water.
Step 5:
Cover and cook on low heat until tender.
Step 6:
Chop the walnuts (or chop as you like).
Step 7:
Chop the almonds in a blender (or as you like).
Step 8:
Chop the dried apricots so that it is the same size as the raisins.
Step 9:
Add honey to the finished rice and stir. There should be a little water left in the rice just to mix the honey, excess moisture will evaporate when stirring.
Step 10:
Drain most of the water from the poppy, and whisk the poppy with the remaining water with a blender (or grind in a mortar, or pass through a meat grinder).
Step 11:
Put dried apricots with raisins and nuts in one convenient bowl, add poppy juice.
Step 12:
Add the warm rice and stir.
Step 13:
Rice kutia is ready for Christmas. Decorate it as you like and serve it to the festive table.
