Christmas Kutia with Rice and Raisins

A juicy, delicious, fragrant, and heartwarming rice kutia — you should make it too! This rice kutia is, let's say, not all that "rice," really. There are just so many other tasty things in it! Hard to believe. Everyone, without exception, should make it!

Cooking method

    Cover the poppy seeds with boiling water and let them soak for 1–2 hours.

    Put the dried apricots and raisins together in one bowl, cover with boiling water, and let them soak for 1–2 hours as well.

    Drain the soaking water from the apricots and raisins, top it up to 1.5 cups, and pour it into a saucepan.

    Add the rinsed rice to the water.

    Cover and cook over low heat until tender.

    Chop the walnuts (or break them up however you like).

    Grind the almonds in a blender (or however is easiest for you).

    Chop the dried apricots so they're about the same size as the raisins.

    Stir the honey into the cooked rice. There should be a little water left in the rice — just enough to blend in the honey; the extra moisture cooks off as you stir.

    Drain off most of the water from the poppy seeds, then blend them with the remaining water (or grind them in a mortar, or run them through a meat grinder).

    In one roomy bowl, combine the dried apricots, raisins, and nuts, and add the poppy-seed paste.

    Add the warm rice and stir.
