- Boil the eggs, beet, and carrot. 2. Cool the eggs and cut them in half. Remove the yolks and mash them with a fork. 3. Peel the cooked vegetables and grate them on the coarse side of a box grater. Finely chop the onion. 4. In a bowl, combine the yolks with the onion, carrot, and beet. Add the mayonnaise and stir. 5. Cut the herring into pieces and remove any bones. 6. Fill the egg-white halves with the vegetable mixture. Top each with a piece of herring. Garnish with fresh herbs.
