Beer Soup

This amazing Norwegian beer soup is a treat for beer lovers! On top of that, ølebrød (as it's called in Norway) is a great remedy for colds, bronchitis, and coughs. Turns out getting better can actually be enjoyable!

    1. Mix the lager and dark beer together, drop in the lemon zest, set over the heat, and bring to a boil.
    1. Stir 1 tablespoon of flour into 30 ml (2 tbsp) of cold milk and add it to the soup.
    1. Beat the whole egg with 1 tablespoon of flour, add 20 ml (about 4 tsp) of milk, mix, and stir into the soup.
    1. Add the honey and salt to the soup.
    1. Simmer for 5 minutes, then take off the heat.
    1. Whisk the egg yolk with 2 tablespoons of the hot soup, then pour it back into the beer soup. Sprinkle with fresh herbs to serve. Croutons go nicely with this soup, too.
