Shrimp Pasta with Zucchini and Tomatoes
A recipe for genuine Italian pasta with an unusual combination of ingredients. Delicious and original, in the Italian style. The pairing of zucchini and shrimp turns out surprisingly well — the dish has a wonderfully delicate, unexpected flavor, and the pasta just melts in your mouth.

Step 1:
Peel the zucchini, scoop out the seeds, and cut into small pieces. Grate the cheese on the fine holes of a grater. Blanch the almonds and slip off their skins. At the same time, you can get the pasta cooking.

To make the pesto, put the zucchini, grated cheese, almonds, 1 garlic clove, a few mint and basil leaves, and a pinch of salt in a blender. Blend to a purée, then pour in 5 tablespoons of olive oil and mix.

Step 3:
Heat olive oil in a skillet and sauté the halved cherry tomatoes and 2 garlic cloves for 5 minutes. Add the peeled shrimp, season with salt, and cook for 3–4 minutes until done.

Step 4:
Drain the pasta in a colander (it should be cooked al dente), reserving a few spoonfuls of the cooking water to stir into the pesto. Toss the pasta with the pesto until well coated. Top with the sautéed tomatoes and shrimp, and finish with grated cheese or crushed nuts if you like. Done — enjoy a taste of fine Italian cooking!
