- Wash the potatoes well and drop them, unpeeled, into boiling salted water for 10–15 minutes. Drain, then cut the potatoes into wedges. Wash the radishes, trim off the tails, and slice them thin. Wash, dry, and chop the parsley. Make the dressing: peel and finely chop the onion, then combine the mustard with the vinegar. Stirring, pour in the oil and add the chopped onion. Put the warm potatoes and radishes in a salad bowl, drizzle with the mustard dressing, and toss. Sprinkle with the parsley.
