High-Protein Shrimp and Lentil Salad
A nourishing, filling salad for anyone watching their figure. It restores your energy in an instant, replenishes your body's protein, and satisfies every palate! I made it for the first time and everyone in my household loved it — hearty and delicious. Red split lentils cook up very quickly into tiny, round little beads that look beautiful in the dish and have a pleasant, mild flavor, gentler than other varieties. This salad is made entirely of protein-rich foods that pair perfectly and are easy to digest.
Cooking method
-
Step 1:
Cook the red lentils until just tender — they cook fast, so keep an eye on them — then drain and let cool.
-
Step 2:
Hard-boil the eggs, peel them, and chop. Cook and peel the shrimp.
-
Step 3:
Thinly slice the onion and lightly sauté it in the vegetable oil until soft.
-
Step 4:
Combine the lentils, shrimp, eggs, and onion. Dress with a squeeze of lemon juice and a splash of soy sauce, and season with salt and dry spices to taste.
-
Step 5:
Toss everything gently and serve.
