Cooking method
Cook beef broth:
Pour cold water over beef + onion head + carrot. As it boils, remove the foam until it disappears. Then reduce the heat to a fine boil, add salt, add a little sugar, bay leaf, allspice. Cook for at least 1.5 hours (put onions and carrots when boiled for an hour).
Take a 1.5 liter saucepan (preferably Teflon), spread out pieces of butter on the bottom, on top:
onion in half rings
beets straws
carrot straws
potato straws
bulgarian pepper straws
parsnips, parsley, dill
sprinkle with salt, pepper, add bay leaf
close the lid tightly (without water) and put on a good fire for 8 minutes. As soon as it starts to sizzle - mix, turn it down a little.
During this time, cut the cabbage into shavings.
At the 8th minute of sauteing, add the vegetables to the broth + cabbage + tomato paste.
From the moment of boiling, cook the cabbage for no more than 3 minutes. Add sour cream to taste.
