- One day my husband — an avid fisherman — came home with an enormous catfish. "Look how much good eating we'll get out of this," he said, "it'll last us ages!" So I had to get creative to do such a generous catch justice. I'd love to share the recipe that turned out to be a perfect match for our "trophy" — catfish ukha (fish soup). Clean and rinse the catfish, then separate the fillet (skin on) from the bones. Cut it into pieces, salt it, and chill it in the refrigerator for a while. Make a stock from the catfish head and fins — those parts give the richest broth. Strain the finished stock, then bring it back to a boil and add the chopped potatoes, onion, and parsley root. Simmer for 20 minutes. Add the pieces of fish, the chopped fresh tomatoes, and the spices, and cook for another 20 minutes. Finish the soup by stirring in a little butter. To serve, place a piece of fish in each bowl and garnish with fresh herbs.
