Turkish Delight (Rahat Lokum) — an Eastern Treat

Turkish delight is my favorite Middle Eastern sweet — my mom bought it for me all the time. Where I live now, you can't find it in the shops, but every so often I crave a little. I came across this recipe in a magazine, and now I make the treat for myself at home. Let me share the secret of this delicious confection with you.

- You'll need a heavy pot — a cauldron or a copper basin works well. Cook a sugar syrup in it. Separately, dissolve the starch in the water, and once the syrup comes to a boil, stir it in. Lower the heat and cook, stirring constantly, until it thickens. Then stir in the cinnamon and orange zest. Divide the mixture into two portions, and stir jam and finely chopped nuts into each. Pour the mixture out onto a wooden board or tray in a layer about 2.5 cm (1 inch) thick. Let it set for 3–4 hours. Once firm, cut it into cubes and dust with powdered sugar; oil the knife with a little vegetable oil, re-oiling it after each cut. Mix some starch with powdered sugar, pour it into a container, add the Turkish delight cubes, and toss to coat. Wrap the container in paper to keep air out. Enjoy your treat!
