  • I came across this wonderful salad in a magazine and decided to make it right away — I adore mushrooms! It turned out tasty and pretty, and now I make it regularly. This mushroom salad belongs to European cuisine, French in particular, and it's simple to put together. Start the eggs boiling, and wash the mushrooms, vegetables, and greens. Cut the mushrooms in half, then quickly sauté them in olive oil until golden — but don't overdo it; they shouldn't burn. Cut the eggs, tomatoes, and pepper into medium strips or wedges, and tear the lettuce by hand to preserve more of its vitamins. Combine the tomatoes, pepper, and mushrooms in a bowl and toss. Season with salt and pepper, drizzle with the vinegar, and mix. Finish by drizzling the salad with the remaining olive oil and garnishing with the egg wedges. The salad will be tasty, fragrant, and a treat for the eyes — especially if you make it in a good mood.
