No-Cook Mashed Jam
Strawberry jam, but with no cooking! Healthier than the usual kind! No-cook mashed strawberry jam is a great alternative to the standard quick-boil jams and other berry treats that the recipe says to cook. You might not call it super healthy, given how much sugar it contains, but it's absolutely less harmful than ordinary jam. You can make mashed jam not just from strawberries — almost any berry will do. It needs to be kept in the refrigerator, though its shelf life is long — up to a year.

- For the jam, use ripe berries, and first sort through them carefully so no spoiled ones end up in your treat. Pull off the strawberry stems, put the berries in a colander, rinse them under running water, and let the excess moisture drain. Then spread the strawberries on a clean towel to dry a little. Now place the berries in a suitably sized container and purée them with an immersion blender. Pour in the amount of granulated sugar called for in the recipe and stir everything well. Let the mashed jam sit for a few hours so all the sugar crystals dissolve, stirring it at least every half hour as it stands. Sterilize the jars — do it however you like, over steam or in the oven, for instance. Get the lids sterile as well. Once the sugar has completely dissolved, spoon the jam into the sterilized jars and seal them tightly. That's it — the mashed jam is ready! Put the jars away in storage. Jam made by this recipe keeps for a long time — right up to the next season — though it usually disappears much faster, because it turns out incredibly delicious. When you open a jar in winter, it's as if summer has come back — that's how wonderful its aroma, color, and flavor are! Cold is a must, so jars of mashed jam should sit either in the refrigerator or in the cellar. Happy cooking and delicious preserving!
