- Here's a recipe for a really tasty Vietnamese dish: tyun rolls. This authentically Vietnamese dish is sure to win over anyone who loves exotic food. To make tyun, first soak the rice in cold water for 5–6 hours. The beans need soaking too, but longer — overnight is best. Pour boiling water over the soaked beans in a colander, then mash them and add salt. Now grind the pork in a meat grinder and mix in the finely chopped onion and chopped anchovy fillets. Season the filling with salt and pepper. Rinse the cabbage leaves and pour boiling water over them in a colander, then stack them one on top of another. Layer rice, beans, and the pork filling onto the leaves in order, then top with more beans and rice. Roll them up just the way you'd roll cabbage rolls. For sturdiness, you can tie each roll with kitchen string. Use up the rest of the filling and cabbage leaves the same way. All that's left is to cook the rolls: drop them into boiling water and cook for about 15 minutes. Gently squeeze out the cooked rolls and they're ready to serve.
