  • This is one of those Belarusian recipes built around ingredients Belarusians love: salo (cured pork fat) and bread kvass. It's the kind of first course that's great to make out in the country, where the choice of food may be limited but there's always garden vegetables, a piece of salo, some flour, and homemade bread kvass on hand. What more do you need for a quick, tasty meal between bouts of hard work in the fields? Let's get started. Pour water into a pot and add bread kvass at a ratio of 4 parts water to 1 part kvass. Put the pot on the heat and bring it to a boil. Take whatever grain you like — we usually use barley or wheat — toast it lightly and stir in a little water. Add it to the boiling water-and-kvass mixture. Cook the grain for five minutes, stirring constantly. Meanwhile, cut the salo into pieces and fry it with the onion and celery, then add them to the pot. Season the vereshchaka with salt and pepper to taste. Finally, put the pot in the oven for 5–10 minutes. To your health!
