Raw Red and Black Currant Jam

  • Sort the red and black currants, wash them, dry them, and purée them with a blender or meat grinder. Combine both purées in one pot, add the sugar, stir, and leave it on the counter for several hours until the sugar fully dissolves, stirring every half hour. Once the sugar has completely dissolved, the raw jam is ready. Pack it into glass jars or plastic bottles and store it in the refrigerator or freezer. The yield is 8 liters of finished jam.
