Grain Salad with Tomatoes and Cucumbers

  • First, peel and dice the tomato, cucumber, and bell pepper. Then finely chop the parsley. Put all the vegetables and herbs together in a large bowl, season with salt and pepper, and mix. Take a large pot of water, salt it, and bring it to a boil. Now add the pearl barley to the boiling water and cook for about 15 minutes. Then add the farro and cook for the same amount of time again. By now the barley should have softened, but not all the way—the grains should still be a little firm inside. Take the pot off the heat and use a slotted spoon to scoop out all the grains. Put the barley in a bowl where it can cool and dry. Once the grains have cooled enough, add them to the bowl of vegetables, toss the whole salad, and add more salt and pepper if needed. In a separate bowl, whisk together the olive oil and lemon juice, then pour this dressing over the salad. And that's it—the grain salad with tomatoes and cucumbers is ready. The result is a wonderful vegetarian dish that's not only filling but practically bursting with vitamins.
