Beef Soup with Tomatoes and Bell Peppers (Shurpa)

A wonderful soup with beef and bell peppers. I first learned and tasted this recipe at a relative's house a long time ago. Shurpa has been on my family's list of favorites ever since—very tasty, fragrant, and filling. It's fit for an everyday meal, too. Even my husband, who usually doesn't find soups satisfying, makes an exception for shurpa. This dish brings some variety to everyday cooking.

  • I make this in a 4-quart pot, and the amounts given are for that size. First I prep all the ingredients so I can add everything to the pot at the right time. Finely chop the onion. Cut the meat into medium cubes—I like to use boneless cuts. Dice the tomatoes. Cut the red or yellow bell pepper into strips. Grate the carrots. Now start cooking: sauté the onion in vegetable oil in the pot. Add the meat and brown it well, about 20 minutes. Add the tomatoes, peppers, carrots, and tomato paste. Pour in boiling water to cover the meat and vegetables, and leave it to simmer for 30 minutes. Meanwhile, peel and cube the potatoes. When the time's up, add the potatoes to the meat and vegetables. Add more boiling water, season with salt and pepper, and cook another 15 minutes or so, until the potatoes are done. When the soup is ready, take it off the heat, stir in the garlic (crushed or grated), and let it rest for 20–25 minutes.
