Salad with Sheep's Cheese

  • This is a true summer salad — it's at its best only in summer, when the tomatoes are especially juicy and sun-ripened and the cucumbers are wonderfully fragrant. We'll marinate the red onion in grape juice, which mellows its sharpness, makes its flavor softer and subtler, and adds a light note to the finished salad. If you like, you can crumble or cube the cheese and toss it with the rest, but it's worth trying it this way — eating the cheese alongside the salad. That helps you control how much cheese you get per bite. So first, marinate the onion: peel and thinly slice it, put it in a small bowl, pour over the grape juice, and set it aside for 15 minutes; when the time's up, drain off the juice and save it for later. While the onion marinates, prep the rest: wash the tomatoes and cucumbers and cut the tomatoes into large slices and the cucumbers into thick rounds, then halve or quarter the rounds depending on their size; wash the fresh oregano, pat it dry, and chop it finely; cut the sheep's cheese into large slices. Now assemble the salad: in a large bowl, combine the chopped tomatoes and cucumbers, add the olives and marinated onion, pour in half the olive oil and the grape juice drained from the onion (30 ml — no more), season with sea salt and half the finely chopped oregano, and toss gently. Lay the cheese slices on top, sprinkle with the remaining oregano, and drizzle with the rest of the olive oil. Serve the salad with slices of fresh bread — ideally homemade and freshly baked.
