The wide variety of Greek salads, whose homeland is Greece, is explained by their broad popularity beyond that country. Elsewhere the salad became widely known closer to the turn of the century, only in a slightly modified form. Traditional Greek salad uses feta cheese, which is made from goat's or sheep's milk. A more budget-friendly version of the salad allowed brined cheese. Fans of vegan cooking prefer to replace feta with soybean tofu.

The main difference between the Greek and any other salad is the brightness and the larger cut of the vegetables. In its homeland the salad is not tossed before serving — it is assembled right in the plate. This does not affect the taste in any way; it is more a matter of habit. The brightness is achieved with green cucumbers, red tomatoes, black olives, white cheese, and the golden hue of olive oil. Although the Greeks themselves prefer to peel the cucumbers.
Tips and tricks:
- a little lemon juice in the olive oil gives the salad a subtle flavor
- the dish tastes better if you stir the salt and spices into the vegetable oil first, then pour it over the vegetables
- you need to be careful with salt: there is already plenty of it in the cheese and olives
