Kharcho Soup with Chicken Wings and Potatoes

A tasty, hearty lunch for the whole family. Kharcho is a classic Georgian soup, known for being spicy and thick, with plenty of garlic and fresh herbs. Fresh tomatoes work beautifully in it, too. In my family this delicious soup is always a favorite.

Cooking method

    Gather the ingredients for the kharcho. Wash the parsley, and peel and wash the vegetables.

    Cut the carrot into matchsticks.

    Finely chop the onion.

    Put the chicken wings, onion, carrot, and salt in a pot. Set it over the heat.

    Cut the potatoes into sticks.

    Rinse the rice thoroughly until the water runs clear.

    15 minutes after the soup comes to a boil, add the potatoes.

    Right after the potatoes, add the rice to the pot.

    Finely mince the garlic.

    In the sunflower oil, fry the garlic with the tomato paste and red pepper.

    Once the potatoes and rice are done, stir the tomato-garlic mixture into the soup.

    Cook the soup for another 3 minutes, then take the pot off the heat.

    Finely chop the parsley.

    Sprinkle the kharcho with chopped parsley when serving. Enjoy!
