Savory Pork Filling for Blini
A juicy meat filling for blini — it doesn't get any better! We make blini (thin crêpe-style pancakes) often at our house, both with sweet fillings and savory ones. My husband loves them stuffed with ground meat, so here's the recipe I use. - Start by simmering the pork: rinse the meat and trim off any excess fat and silverskin, then cut it into roughly 1½-inch (3-4 cm) pieces and put them in a pot. Add the allspice, bay leaves, cloves, and salt. Peel one onion and one clove of garlic, rinse them, and drop them in whole (no need to chop). Cover the meat with water and bring it to a boil over high heat, then lower the heat to a gentle simmer and cook for about 45 minutes, skimming off the foam as it rises. About 15 minutes before it's done, season the broth with salt and ground black pepper. Peel the remaining onions and garlic, dice them small, and sauté in vegetable oil until soft and lightly golden. Run the cooked meat and sautéed onions through a meat grinder fitted with a medium plate. Stir a splash of the cooking broth (about 3 tablespoons / 50 ml) into the ground mixture. If it still seems dry, add a little more broth. Season with a pinch of nutmeg (optional) and ground black pepper. Now make your blini and treat the family!
