- Rice with onions makes a great side for fish, meat, or poultry, and it can stand on its own as a light meatless meal. 1. Rinse the rice well in several changes of water. 2. Trim and rinse the leek (or use a regular onion). 3. Heat the oil and lightly sauté the leek. 4. Add the rice and let it toast in the oil for a moment, stirring. 5. Pour in the water, season with salt, bring to a boil, then cover and turn off the burner (if you're on an electric stove). Set a kitchen towel over the lid — the rice will finish cooking on its own and come out tender and fluffy.
