- Brussels sprouts are a member of the cabbage family, prized for their high protein content (2.5 to 7 percent), which is higher than other cabbages. In vitamin C, they beat oranges and lemons by half again as much. A soup made from them is nutritious enough to rival chicken broth. I found this recipe in a book on healthy eating and recommend adding it to your kids' diet. So let's get cooking this tasty, wholesome dish. Cut the onion, carrot, and parsley root into strips and lightly sauté them in a skillet with melted butter. Cut the potatoes into small cubes. Drop the potatoes into boiling salted water, bring it back to a boil, then add the sautéed roots. Cook for 10 minutes. Trim and rinse the sprouts and add them to the simmering soup. Keep cooking until the sprouts are tender, about 15 minutes. Your Brussels sprouts soup is ready! Serve it with sour cream and fresh herbs.
