How do you make homemade mustard from powder with pickle brine? First, gather all the ingredients. You'll need just three: mustard powder, refined vegetable oil, and brine. Any brine works - pickle, tomato, or sauerkraut brine. The richer and sharper it is, the brighter the finished mustard's flavor. Use only fresh mustard powder.

Step 2:
Put the mustard powder in a bowl and gradually pour in the warmed brine, stirring as you go. Don't dump all the brine in at once - it'll be hard to mix without lumps and you won't be able to control the thickness. Since the brine already has plenty of flavor, you won't need to add salt, sugar, or vinegar. But if you like, you can make it more interesting by adding hot pepper, applesauce, tomato sauce, or honey.

Step 3:
Pour the vegetable oil into the bowl with the mustard and stir. The oil softens the finished mustard's flavor and makes it velvety, and it makes the mustard easier to spread. You can also add nutmeg or ground cloves. Transfer it to a jar, seal it tightly, and leave it at room temperature for 8 hours to infuse. Then move it to the fridge and store it there.

- Since everyone's tolerance for salt, sweetness, bitterness, heat, acidity, and spice is different, always add spices and seasonings to your own taste! If you're using a seasoning for the first time, keep in mind that some are especially easy to overdo (chili pepper, for example).
