Savory Layered Fish Cake for March 8th
This savory "cake" comes out big — plenty for everyone! It's easy to put together, and all the ingredients are easy to find.

Step 1:
THE BASE: For the base you'll need two sheets of frozen puff pastry.

Place the pastry, still frozen, on a parchment-lined baking sheet. Put the sheet into a cold oven, then bake the puff pastry at 350°F (180°C) until golden.

Step 3:
Once cooled, carefully split each pastry sheet horizontally into three thin layers: the middle layer goes on the bottom of the cake, the top layer in the center, and the bottom layer on top.

FILLING #1: Red fish.

Step 5:
Grate the hard cheese on a fine grater.

Step 6:
Cut the fish off the skin and dice it medium. Reserve a few thin slices for garnish.

Finely dice the gherkins and chop the dill.

Step 8:
Peel the cooled hard-boiled eggs and dice them.

Step 9:
Combine the fish, cheese, gherkins, dill, and eggs with the mayonnaise. Season with salt and pepper to taste.

Set the bottom pastry layers together and spread the red-fish filling evenly over them.

Lay the uneven pastry layers on top, pressing gently with your hands — if they crack a little, that's fine.

FILLING #2: Smoked fish.

Mix the curd-style cream cheese with the processed cream cheese and horseradish.

Step 14:
Flake the mackerel into pieces, removing the bones.

Step 15:
Spread the cheese mixture over the pastry, then arrange the mackerel on top.

Press down gently with the last puff-pastry layers. Cover with plastic wrap and set a light weight on top, such as a small cutting board. Refrigerate the fish cake for a couple of hours — or overnight, so the layers soak through well.

DECORATION: Decorate just before serving.

For the coating, mix the two cheeses: processed cream cheese and curd-style cream cheese.

Spread the cheese mixture evenly over the top and sides of the cake.

Slice the fresh cucumber into thin lengthwise strips as tall as the cake.

Step 21:
Press the cucumber strips onto the sides of the cake.

Step 22:
Green peas, green onion, and roses shaped from the red fish round out the festive look.
