Buckwheat Baked in a Pumpkin (Microwave)

An unusual dessert in an edible pumpkin bowl! Porridge baked in a pumpkin in the microwave is an incredibly simple, wholesome, and delicious dish. Since it takes so little time and effort, this appetizing porridge is easy to make for a family breakfast in the morning, or to serve in the evening as a light, not-too-rich dessert.

  • Since the pumpkin cooks in the microwave here, choose one that fits your particular appliance. A large pumpkin won't fit and would take too long to cook anyway, so it's best to pick a small, compact one weighing no more than about 1 lb (0.5 kg). This recipe uses buckwheat, but following the same steps you can bake any porridge you like. Rinse the buckwheat several times under running water and put it in a saucepan. Cover with clean water and cook over low heat until half done. Wash a small pumpkin well and pat it dry with paper towels. Cut off the top with the stem and set it aside as a lid for your makeshift pumpkin pot. Scrape out all the flesh and seeds with a spoon or knife to hollow it out, then rinse the inside and dry it with paper towels or sturdy napkins. To the half-cooked buckwheat in the saucepan, add the honey, ground cinnamon, and a little nutmeg. Rinse the walnuts in hot water, dry them, and stir them into the buckwheat too. Mix everything together thoroughly. Spoon the buckwheat into the pumpkin and tuck a pat of butter into the middle so the pumpkin turns out juicier and more fragrant. Cover the pumpkin with its cut-off top, like a lid on a pot. Set the pumpkin on a large plate and put it in the microwave. Cook on high power for 25–30 minutes. When the time is up, take the pumpkin out and check it: if it's soft and juicy, it's done and ready to serve. If not, microwave it in additional 3–4 minute bursts (repeat 2–3 times if needed).
