Build the salad using a square ring mold set in the center of a plate. First layer: boil the potatoes in their skins, cool, peel, and grate on a coarse grater. Spread them on the bottom of the mold and pipe a lattice of mayonnaise over the top.

You can coat the top more generously with mayonnaise or just pipe a pretty lattice. Garnish with pomegranate seeds. Chill the salad for an hour so the flavors meld, then carefully lift off the mold. Enjoy!

  • This "General" salad with beets is one of those easy but festive layered salads. Many think of it as a "man's salad," since it's quite hearty and has a good layer of meat — but I doubt anyone would turn it down. You can make it in individual portions or in a large bowl, scaling up the ingredients accordingly. Garnish it with corn or pomegranate; pomegranate looks especially celebratory. The classic version is the simplest and the safest bet when you have a crowd and want to please everyone — it relies only on common, everyday ingredients.
