"Tank" Layered Salad with Mushrooms

Cooking method

  1. Step 1:

    For this salad you'll need two molds: a rectangular one for the body of the tank and a small bowl for the turret. Line both with plastic wrap. Divide the ingredients so that 3/4 goes into the body and 1/4 into the turret. The salad is layered, with a lattice of mayonnaise over each layer.

    TANK BODY: Grate the pickled cucumbers on a fine grater, squeeze out the liquid, and spread a thin layer on the bottom of the mold. Add a mayonnaise lattice.

    For the next layer, cool and peel potatoes boiled in their skins, grate them on a coarse grater, and spread them over the cucumbers. Add a mayonnaise lattice.

    For the next layer, cool and peel the hard-boiled eggs, grate them on a fine grater, and spread them over the potatoes. Add a mayonnaise lattice.

    The next-to-last layer is pickled honey mushrooms — though you could use pickled button mushrooms, or sauté fresh ones. If the mushrooms are large, cut them, but not too small. Add a mayonnaise lattice.

    The last layer is boiled, cooled chicken breast. Cut it up and spread it over the mushrooms. Add a mayonnaise lattice.

    TANK TURRET: Use a small bowl for the turret. Since it's awkward to layer inside it, put down a layer of coarsely grated cucumber, then mix the remaining ingredients with mayonnaise and simply pile them into the bowl over the cucumber. ASSEMBLY: Carefully invert the tank body onto a large plate or tray — cover the mold with the tray, flip it over, and gently lift off the mold.

    Unmold the turret on top of the body, holding it steady with your hands as you flip it — this part is a bit trickier.

    DECORATION: Cut the fresh cucumber into thin rounds and arrange them along the sides of the tank as wheels.

    Cut stars from the carrot and use them to decorate the tank. Pipe a message in mayonnaise. Make the gun barrel from two breadsticks. Enjoy!
