Cooking method

Step 1:
Take the whey left over from making rennet cheese, pour it into a heavy-bottomed saucepan, and set it over low heat.

Simmer it down to about three-quarters of its original volume.

Step 3:
Add the cream and let it cook a little longer over low heat.

Step 4:
Blend the finished brunost with an immersion blender until smooth.

Step 5:
Pour into muffin molds and refrigerate. The cheese sets to a caramel color and has an incredible flavor.
