    1. Rinse and peel the carrot and grate it on a julienne grater (the kind used for Korean- or Chinese-style carrots). 2. Peel the onion and slice it into half-rings. 3. Seed the bell pepper and cut it into thin strips. 4. Cut the eggplant into strips as well, sprinkle it with salt, let it sit for 20 minutes, then squeeze out the juice. 5. Add oil to a skillet and fry each ingredient separately, one at a time. 6. Boil the starch noodles according to the package directions, drain them in a sieve, and let the water run off. 7. Combine all the ingredients in a deep bowl and season with salt and pepper to taste. Add the minced garlic, dress with the sesame oil and soy sauce, toss well, and serve.
