"Rooster" Appetizer

A charming appetizer—pretty, melt-in-your-mouth, and perfect for New Year's! These little "rooster" crackers can stand in for a whole platter of trendy canapés.   1. Step 1:

    Peel the cooked carrot and egg. It's handy to cook up extra carrots, eggs, and other basics whenever you're making salads.

    Grate the egg on the small holes of a box grater. Grate the processed cheese.

    Press the peeled garlic in with the egg and cheese.

    Stir in the mayonnaise to bind it. The mixture should be fairly firm.

    Grate the hard cheese.

    Shape the cheese-and-mayonnaise mixture into 7 balls and roll them in the grated hard cheese.

    Line a platter with fresh lettuce and set the crackers, topped with the balls, on top.

    Cut combs, beaks, and feet out of the carrot.

    Turn the balls into little roosters using the carrot pieces and peppercorns for eyes. They come out adorable.
