Chinese-Style Potato Salad

An easy, unusual salad with a zesty kick. My whole family gobbles it up — even though I'd never caught any of them eating barely-cooked potato before!

  1. Step 1:

    Prepare the ingredients for the salad.

    Cut the potatoes into thin matchsticks or grate them on a medium grater.

    Drop them into boiling salted water for 1–1.5 minutes to rinse out the starch.

    Drain in a colander, then dunk the colander into a bowl of cold water. Once the potatoes are completely cool, let them drain.

    Make the dressing: combine the finely minced garlic, vinegar, salt, and MSG, and mix. If you don't have MSG, you can use a regular bouillon cube instead.

    Put the potatoes in a glass or ceramic dish, add the dressing, toss, and after 10 minutes it's ready to serve.
