Kefir Okroshka with Beef
This tender, pleasantly tangy dish brings a summery lightness to your table. On a hot summer day — or just for a change of pace — make okroshka, a cold soup built on kefir (a tart, drinkable fermented milk). It's low in calories, which is sure to please anyone who eats healthy. A multicooker or pressure cooker speeds up cooking the beef, and kefir made from a good starter culture makes the okroshka as good for you as possible.
