  • Fish soup with cream or milk is a lasting favorite in Finnish cooking. In Finnish, "lohi" means "salmon." Lohikeitto is a refined version of Finnish fish soup enriched with cream. Remove the gills from the salmon head, rinse it, and set it to cook over medium heat. Once the soup comes to a boil, skim off the foam and add the onion and one whole potato. Five minutes later, add the bay leaf and allspice berries. Cook over medium heat for 20 minutes. Remove the potato and strain the broth. Mash the potato and stir the puree back into the broth. Sauté the leek, sliced into rounds, in butter, then add the celery. To the broth add julienned carrot, the sautéed leek, and raw diced potato. Cook for 15 minutes. Whisk the cream with the flour, pour it into the simmering broth, and stir everything together. Add the fish cut into pieces, but don't let it return to a boil. Pick the meat off the fish head and add it to the soup. Cover the soup and let it rest for a day. Serve with fresh dill and dark rye bread or Karelian pasties (rye pies with a rice filling).
