Full Shchi (Russian Sauerkraut Soup) in a Pot with Beef and Mushrooms

Authentic Russian shchi made the classic way! Delicious. Shchi — a hearty cabbage soup — has been the centerpiece hot dish on the Russian family table since ancient times. No matter what new ingredient came into fashion (potatoes, for example), shchi held onto its place of honor on the tables of both humble peasants and wealthy nobles. This "full" (rich) shchi recipe comes from V. V. Pokhlyobkin, the famous Russian food historian. I tried to follow all his instructions down to the last detail. The only thing I skipped was the parsley root in the broth, for the simple reason that I couldn't find any at the market. Even so, the shchi came out superb.

  • Put the beef in cold water along with an onion, celery root, and a carrot, and cook for two hours; salt it about an hour in. Then strain the broth and discard the onion and root vegetables. Cut the beef into small pieces and return it to the broth. Put the sauerkraut in a clay pot, pour in about 2 cups (500 ml) of boiling water, and add the ghee. Cover the pot and place it in an oven preheated to 300°F (150°C) while the broth cooks. As soon as the cabbage is soft, take it out and combine it with the beef and strained broth. Put the dried mushrooms and the quartered potatoes in a saucepan, cover with 2 cups of cold water, and set it over the heat. Once the water boils, lift out the mushrooms, cut them into strips, and return them to finish cooking in the mushroom broth. Take out the cooked potatoes, mash them with a fork, and return them to the mushroom broth as well. When the mushrooms are done, pour the contents of the saucepan into the meat broth. To the combined broths and cabbage, add a finely chopped onion, julienned carrot and turnip, and celery stalks sliced into rounds. Add the bay leaf, ground black pepper, marjoram, and salt. Bring to a boil, stir in finely chopped parsley, and put it in the oven at 210°F (100°C). The shchi can sit in the oven anywhere from one hour to several — the longer it goes, the better and more distinctive its flavor becomes. Then stir in finely chopped dill and minced garlic and let it rest for about 15 minutes. Just before serving, top each bowl with coarsely chopped salted mushrooms and a spoonful of sour cream.
