  • Beat the yolks with the sugar and a pinch of salt. Pour in half a liter (about 2 cups) of the milk and set over low heat for 25–30 minutes. It's important not to let the mixture come to a boil, and to whisk it constantly. The egg mixture will grow in volume and turn pale. Take it off the heat. Warm the remaining milk and the cream with the nutmeg, then combine the two mixtures and sweeten with vanilla sugar (optional). Chill in the refrigerator before serving (overnight is best). Serve the eggnog cold.
