Spaghetti with Cheese, Tomatoes, and Eggplant

A delicious spaghetti recipe with an original bell-pepper sauce. It comes together fairly quickly — about 30 minutes — but that's beside the point; the point is the flavor! It's simply wonderful, hard to put into words — you just have to try it. I caught this recipe on a cooking show and it stuck with me.

  • Boil the spaghetti in salted water until tender, drain and rinse it, then toss with a little vegetable oil. Meanwhile, make the sauce: cut the bell pepper into strips and sauté it in a skillet with olive oil or refined sunflower oil. Once the pepper has browned a little, add the diced eggplant and fry until lightly golden. Then add the coarsely chopped tomatoes and simmer until the tomatoes soften. At the very end, add a pinch of dried basil (or a sprig of fresh), season with salt, stir, and take off the heat. To serve: plate the spaghetti Italian-style, spoon the sauce over it, and sprinkle with grated cheese.
