Step-by-step cooking
Transcarpathia cuisine has enriched Ukrainian cuisine with elements of Romanian and Hungarian folk cuisines. It can be very interesting to read collections of recipes of Transcarpathian dishes. In one of these small pamphlets bought on the occasion, my attention was attracted by a culinary recipe for festive corn porridge-banush in Mukachevo. I cook corn flour in boiling sour cream for a quarter of an hour. Then I shift half of the banana into another saucepan and cook each part for another eight minutes. I divide the egg yolk, sugar and butter in half and mix with each half of the porridge. I transfer the banana into wooden or clay bowls and serve it to the table with grated cheese and finely chopped dill and parsley. Very simple food, the taste of which is not inferior to many fashionable delicacies. When I offer it to the guests gathered at the festive table, those who do not yet know the culinary recipe do not immediately believe that this wonderful dish is a kind of the most ordinary hominy.
