  • The cuisine of Transcarpathia has enriched Ukrainian cooking with elements of Romanian and Hungarian folk kitchens. It's fascinating to page through collections of Transcarpathian recipes, and it was in one such little pamphlet I happened to pick up that this festive Mukachevo-style banush caught my eye. Cook the cornmeal in boiling sour cream for a quarter of an hour. Then transfer half the banush to another pot and cook each portion for about eight minutes more. Divide the egg yolk, sugar, and butter in half and stir a half into each portion of porridge. Spoon the banush into wooden or clay bowls and serve with grated bryndza and finely chopped dill and parsley. It's very simple food, yet its flavor rivals many trendy delicacies. When I set it before guests at a festive table, those who don't yet know the recipe can hardly believe this wonderful dish is really just a version of plain old cornmeal mush (mamaliga).
