French-Style Fluffy Rice Side Dish

Pour vegetable oil into a skillet and heat it. Add the washed and dried rice (it shouldn't be wet!) and stir so every grain is coated in oil.

Fry until the grains turn slightly translucent.

Then transfer it to boiling salted water and cook as usual. Use twice as much water as rice. Turn the heat down to low and cover the pot — and don't stir while it cooks! It'll take about 15 minutes.

Cook the rice until all the water has boiled away. The result is beautiful and fluffy.
