  • Food should be not just delicious but good for you, too. When vitamins were first discovered, cooks everywhere began puzzling over how to keep them intact in their winter preserves — back then no one yet knew that not all vitamins are destroyed by cooking. Jam has been made here for as long as anyone can remember, and over time a huge collection of recipes has built up. Some are genuinely healthful, even though nobody had heard of vitamins at the time. This chokeberry and apple jam is one of them. Drop the berries into boiling water for about five minutes, then cool them in cold water. Drain them a little and put them in your jam-making pot. Pour 2 cups of water into a saucepan, add 500 g of sugar, and cook a syrup. Pour the hot syrup over the berries and bring to a boil. Simmer over low heat for three minutes, then set aside for 10 hours. Peel the apples and cut them into slices, then boil the slices in water for about ten minutes. Fifteen minutes before the chokeberries finish cooking, add the boiled apples, stir in the rest of the sugar, and cook until done. Right at the end, add the citric acid and the vanilla sugar or cinnamon.
