  • Lentil soup is an absolute delight — I just love it. Recipes for these soups are always very simple. Lentil soup is quite nourishing, since lentils are high in protein. Leave out the meat and it works for vegetarians too, while staying just as filling. Rinse the lentils. I like to use red lentils, since they're more tender, break down better as they cook, and give the soup body. Finely chop the onion, celery root, and parsley root and fry them in a skillet until golden. Dice the brisket and fry it briefly. Dip the sausages in boiling water for a few seconds, remove them, and cut them into rounds. Make the vegetable broth, bring it to a boil, and add the ingredients in this order: first the lentils, then, once it returns to a boil, the sautéed onion, celery, and parsley. Next add the brisket and the sliced hunter's sausages. Simmer for 20 to 25 minutes over low heat. Chop the parsley and add it 2 minutes before the soup is done, along with the ground black pepper, wine vinegar, and chopped garlic.
