  • Every culture serves food tied to the story or legend behind a holiday. On Halloween we eat pumpkin — partly because the carved pumpkin, "Jack-o'-lantern," is the symbol of the night before All Saints' Day, and partly because it's the season for gathering the last pumpkins from the patch. In short, we have plenty of pumpkin on hand, and it needs eating. This pumpkin cream soup with peanut butter is one kids should love. First, cook the pumpkin and sweet potato until tender and purée them in a blender. In a saucepan over medium heat, melt the butter and gradually stir in the pumpkin purée, sweet potato purée, and peanut butter. Make sure the peanut butter is smooth, with no whole nuts. Pour in the chicken broth, add the salt and pepper, and mix thoroughly until smooth. Bring to a boil, then lower the heat and simmer for twenty minutes. You should end up with a rich, bright-orange cream soup. Serve it hot, sprinkled with finely chopped green onion, and pass the sour cream on the side.
